Ingredients
  

Vegetables

  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 large red onion, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces

Seasonings and Oil

  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1 pinch black pepper

Protein

  • 1 package (12 oz) chicken sausage, sliced into 3/4 inch rounds Robust Italian flavor recommended

Instructions
 

Preparation

  • Chop the veggies and add them to a large bowl. Drizzle with avocado oil and toss until well coated.
  • In a smaller bowl, mix together garlic powder, onion powder, Italian seasoning, salt, and pepper. Add this spice blend to the veggies and toss again to coat evenly.
  • Slice the chicken sausage into 3/4 inch rounds and add it to the bowl with the veggies. Toss everything together.

Cooking

  • Preheat the air fryer to 390 degrees F. Spray the air fryer basket with cooking spray.
  • Place the veggie and sausage mix in the air fryer basket in an even layer. Cook for 10 minutes, flipping halfway through.
  • Once cooked, remove from the air fryer and serve immediately.

Notes

For serving, you can place the mixture over cauliflower rice or brown rice, and drizzle with extra olive oil or balsamic vinegar if desired. Store leftovers in an airtight container for up to 3 days.
