  • 200 g spaghetti Cook according to package instructions.
  • 150 g bacon or pancetta, diced Use crispy bacon for more flavor.
  • 2 large eggs Use fresh eggs for better flavor.
  • 100 g Parmesan cheese, grated Can mix with Pecorino Romano cheese for extra flavor.
  • 2 cloves garlic, minced Adds aromatic flavor.
  • Salt and pepper to taste Season as preferred.
  • Fresh parsley, chopped (for garnish) For presentation.

Preparation

  • Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  • In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon and drain excess fat, leaving a tablespoon in the pan.
  • Add minced garlic to the skillet and sauté for about 1 minute.
  • In a bowl, whisk together eggs and grated Parmesan cheese.
  • Add the cooked spaghetti to the skillet and toss to coat in the bacon fat.
  • Remove from heat, then quickly mix in the egg and cheese mixture, stirring constantly until creamy. If too thick, add a splash of pasta water.
  • Incorporate the crispy bacon and season with salt and pepper.
  • Serve immediately, garnished with fresh parsley.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. When reheating, add a splash of water or milk to help restore the creamy texture. You can add peas or spinach for extra nutrition, or use turkey bacon for a leaner option.
