  • 2 pieces ripe bananas The more spots, the better!
  • 1 cup sugar Can be replaced with brown sugar.
  • 1/3 cup melted butter Vegetable oil or applesauce can be used as substitutes.
  • 1 piece egg Use room temperature for best results.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • pinch salt
  • 1 cup all-purpose flour Whole wheat flour can be substituted for a healthier option.

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 4x8 inch loaf pan with cooking spray or butter.
  • In a mixing bowl, mash the two ripe bananas until smooth and creamy.
  • Stir the melted butter into the mashed bananas until fully combined.
  • Mix in the sugar, egg, and vanilla extract until smooth.
  • Sprinkle in the baking soda and a pinch of salt, and mix gently.
  • Fold in the all-purpose flour carefully until just combined.
  • Transfer the batter into the greased loaf pan.

Baking

  • Bake in the preheated oven for 60-65 minutes. Check for doneness with a toothpick; it should come out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For extra moistness, you can include yogurt or sour cream in the batter. Options for additions include nuts, chocolate chips, or dried fruits. Store in an airtight container for up to three days at room temperature, a week in the fridge, or freeze for up to 3 months.
