  • 1 pound ground beef
  • 8 pieces flour tortillas You can substitute with corn tortillas if preferred.
  • 2 cups shredded cheese (cheddar or Mexican blend) Use freshly shredded cheese for better melting.
  • 1 can (15 oz) tomato sauce
  • 1 can (4 oz) diced green chilies
  • 1 tablespoon chili powder Use a hotter type for spicier enchiladas.
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Preparation

  • Preheat oven to 350°F (175°C).
  • In a skillet, cook ground beef over medium heat until browned; drain excess fat.
  • Stir in chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  • In a separate saucepan, combine tomato sauce and diced green chilies; heat through.
  • Place a portion of the beef mixture on each tortilla, sprinkle with cheese, then roll up.
  • Place rolled tortillas seam-side down in a baking dish.
  • Pour the enchilada sauce over the top and sprinkle with remaining cheese.
  • Bake for 20-25 minutes until cheese is bubbly.

Notes

Best served hot, garnished with chopped cilantro, sour cream, or sliced jalapeños. Pair with Mexican rice and refried beans for a complete meal. To store leftovers, cool completely, then place in an airtight container for up to 3-4 days in the refrigerator, or freeze for 2-3 months.
