  • 2.5 lbs Boneless sirloin steak, cut into 1.5-inch cubes Can substitute with chuck roast or round steak.
  • 3 cups Beef broth Use low-sodium for a healthier option.
  • 1 package French onion soup mix
  • 16 oz Egg noodles Wide egg noodles are recommended.
  • 10 oz Frozen peas Optional, for added color and nutrition.

Preparation

  • Heat a large skillet or Dutch oven over medium-high heat. Add a tablespoon of oil and brown the beef tips on all sides, about 2-3 minutes per side.
  • Remove the beef from the pan and set aside.
  • Boil a large pot of salted water. Add the egg noodles and cook for about 8 minutes, until tender. Drain and set aside.

Cooking

  • In the same skillet, sauté onions, garlic, and mushrooms until softened, about 5 minutes.
  • Pour in the beef stock and any desired seasonings. Bring the mixture to a simmer.
  • Return the seared beef tips to the skillet and cover. Reduce heat to low and let it simmer for 20 minutes in a pressure cooker or 6-8 hours in a slow cooker.
  • In a small bowl, whisk together cornstarch and water. Stir the slurry into the skillet to thicken the sauce as desired.
  • Finally, add the cooked egg noodles to the skillet and toss gently to combine. Serve hot.

Notes

This dish pairs well with sautéed asparagus or roasted broccoli. For extra richness, garnish with fresh herbs or a dollop of sour cream.
