Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons chai spice blend (cinnamon, ginger, cardamom, cloves)

Wet Ingredients

  • 1/2 cup unsalted butter, softened Make sure it's at room temperature.
  • 1/2 cup maple syrup Can substitute with honey.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup chai spice sugar (for topping) Adds flavor and texture.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, whisk together the flour, baking soda, salt, and chai spice blend.
  • In a separate bowl, cream together the softened butter and maple syrup.
  • Add the egg and vanilla extract to the butter mixture, mixing until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

Baking

  • Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper.
  • Flatten them slightly and sprinkle chai spice sugar on top.
  • Bake for 10-12 minutes or until the edges are golden.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For chewier cookies, slightly underbake them by a minute or two. Store in an airtight container at room temperature for up to a week or freeze for longer storage.
