Ingredients
  

For the Crust

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cream Cheese Filling

  • 8 oz cream cheese, softened Make sure it’s at room temperature.
  • 1/2 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups fresh blueberries Can use frozen blueberries if thawed and drained.
  • 1 tsp lemon juice

Preparation

  • Preheat the oven to 350°F (175°C) and grease an 8-inch square baking dish.
  • In a bowl, mix together flour, oats, brown sugar, granulated sugar, and melted butter to create a crumble mixture. Reserve half for topping.
  • Press the remaining mixture into the bottom of the prepared baking dish and bake for 10 minutes.

Making the Filling

  • In another bowl, beat the cream cheese with sugar, egg, and vanilla until smooth.
  • Stir in lemon juice and gently fold in blueberries.
  • Pour the cream cheese filling over the baked crust and sprinkle the reserved crumble mixture on top.

Baking

  • Bake for an additional 25-30 minutes or until set.
  • Allow to cool completely before cutting into bars.

Notes

These bars are best served chilled or at room temperature. Store in an airtight container in the refrigerator for up to a week. For longer storage, freeze wrapped tightly in plastic wrap.
