  • 1 cup chicken broth Can be replaced with vegetable broth.
  • 1 teaspoon Cajun seasoning Adjust according to taste.

  • 1/2 cup heavy cream Can substitute with coconut milk.
  • 2 tablespoons olive oil For sautéing ingredients.

Instructions
 

Preparation

  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the chopped onion, minced garlic, and diced bell pepper. Sauté until softened, about 3-4 minutes.
  • Add the chicken breasts to the pot. Season with Cajun seasoning, salt, and pepper. Cook until the chicken is browned on both sides, roughly 5-7 minutes.
  • Stir in the orzo, diced tomatoes (with juices), and chicken broth. Bring the mixture to a boil.
  • Reduce the heat and let it simmer for about 15-20 minutes, or until the orzo is cooked through and the liquid is absorbed.
  • Add the heavy cream and cook for an additional 5 minutes, allowing it to meld with the other flavors.
  • Before serving, garnish your dish with chopped fresh parsley.

Notes

Store leftovers in an airtight container for up to 3-4 days in the fridge, or freeze for up to 2 months. Reheat in a microwave or stovetop, adding a splash of broth if needed.
