Ingredients
  

Cheese Mixture

  • 1 cup shredded mozzarella cheese Use finely shredded for best melting texture.
  • ½ cup grated parmesan cheese

Battering Mixture

  • 2 large eggs Whisked with salt and pepper.
  • 1 cup panko breadcrumbs Use for a lighter and crunchier texture.

Seasoning

  • Salt and pepper to taste
  • Fresh parsley (optional) For garnishing.

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the mozzarella and parmesan cheese well.
  • In a separate bowl, whisk the eggs with salt and pepper until combined.
  • Take small amounts of the cheese mixture and form them into golf ball-sized bites.
  • Dip each bite into the egg mixture, then roll it in the breadcrumbs until fully coated.
  • Place all the bites onto the prepared baking sheet and bake for 15-20 minutes, or until they are golden brown.

Notes

Serve hot with your favorite dipping sauce, like marinara or ranch. Store leftovers in an airtight container in the fridge for up to 3 days or freeze the uncooked bites for up to 2 months.
