  • 1 ¼ cups powdered sugar (divided) Divided into two parts: 1/4 cup for mixing and the rest for coating
  • ½ cup softened butter Make sure it's softened for easy mixing
  • 1 cup flour
  • ¼ cup instant oats
  • ¼ cup finely chopped sweetened coconut
  • ¼ cup finely chopped walnuts Can substitute with pecans
  • 1 pinch salt
  • 15 pieces maraschino cherries (finely chopped) Can use fresh or dried cherries as substitutes

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, cream together 1/4 cup of powdered sugar and softened butter until the mixture is smooth.
  • Gradually add the flour, oats, coconut, walnuts, and a pinch of salt to the bowl. Finally, gently fold in the chopped cherries.
  • Use a spoon to drop portions of dough onto your baking sheet, making sure to space them 2 inches apart.
  • Place the cookies in the oven. Bake for about 18 minutes or until they turn slightly golden.
  • After baking, roll the cookies in the remaining powdered sugar until they are fully coated.

Notes

These cookies are best served fresh but can also be enjoyed later. Keep in an airtight container at room temperature for about a week, or freeze them layered with parchment paper to prevent sticking. Adjust the amount of cherries based on your preference for sweetness.
