  • 12 oz Chicken Breast, Skinless, Boneless
  • 3 cups Shrimp, Raw
  • 1 large Onion, Chopped
  • 2 medium Bell Peppers, Sliced into Thin Strips Preferably green
  • 2-3 cloves Garlic, Minced or Pressed
  • 3 cups Chicken Broth
  • 28 oz Canned Diced Tomatoes
  • 1.25 cups Brown Rice, Short Grain
  • 1 tsp Turmeric
  • 0.5 tsp Garlic Powder
  • 1 tsp Paprika, Divided
  • 1 pinch Oregano
  • Salt and Pepper To taste
  • Cilantro, Chopped (Optional) For garnish

Instructions
 

Preparation

  • Start by cooking the chicken and shrimp in a skillet with a bit of oil.
  • Add onions and bell peppers, and mix in minced garlic, salt, and pepper.

Cooking

  • In a separate pot, combine chicken broth and canned diced tomatoes. Bring to a boil.
  • Add brown rice and spices, then simmer until rice is cooked and the protein is done.

Notes
