Ingredients
  

For the Chicken

  • 2 lbs boneless, skinless chicken thighs or breasts Preferred for flavor and tenderness.
  • 4 hours buttermilk, for marinating Marinate chicken in buttermilk to enhance flavor.
  • 1 cup hot sauce For additional flavor in the marinade.
  • 1 cup all-purpose flour For coating the chicken.
  • 1/2 cup cornmeal Mix with flour for a crispy coating.
  • 1 tsp cayenne pepper Optional, for added spice.

For the Waffles

  • 2 cups all-purpose flour Base for waffle structure.
  • 2 tsp baking powder Leavening agent.
  • 2 large eggs For binding and richness.
  • 1 3/4 cups buttermilk For moisture and flavor.
  • 1/2 cup melted butter Adds richness to the batter.
  • 1 tsp vanilla extract Optional, for extra flavor.
  • 1 tbsp sugar Sweetens the batter.

Optional Additions

  • 1 tbsp spicy seasonings Cayenne pepper or similar for extra kick.
  • 1/2 cup shredded cheddar cheese For savory flavor in waffles.
  • 1 scallion chopped For garnish and flavor.

Instructions
 

Preparation

  • Marinate chicken in buttermilk and hot sauce for at least 4 hours or overnight.
  • Mix flour and cornmeal in a bowl for coating.
  • Preheat oil in a heavy-bottomed skillet to 350-375°F for frying.

Cooking Chicken

  • Coat marinated chicken in the flour mixture.
  • Fry chicken in hot oil until golden brown, about 5-6 minutes per side.

Making Waffles

  • In a large bowl, combine dry ingredients: flour, baking powder, and sugar.
  • In another bowl, whisk wet ingredients: eggs, buttermilk, melted butter, and vanilla.
  • Gently fold wet ingredients into the dry mix, being careful not to overmix.
  • Preheat waffle maker and spray with non-stick spray.
  • Pour batter into the waffle maker and cook according to manufacturer's instructions.

Serving

  • Serve crispy chicken on top of hot waffles.
  • Drizzle with maple syrup and garnish with chives or parsley.

Notes

Try adding chocolate chips or blueberries to the waffle batter for variations. Serve with different sauces for a personalized touch.
