  • 2 cups basmati rice
  • 4 cups chicken broth
  • 3 cloves garlic, minced
  • 1/8 cup finely diced onions

  • 1 teaspoon ground turmeric for authentic yellow color

  • 3/4 cup frozen peas

  • 5 teaspoons cumin seeds

Preparation

  • Marinate the chicken for 1-2 hours for maximum flavor.

Cooking

  • Sauté onions, garlic, and optional bell peppers in olive oil.
  • Brown the marinated chicken pieces evenly in a heavy-bottomed pot.
  • Add ground turmeric and toast briefly.
  • Incorporate the rice, then pour the chicken broth over the mixture.
  • Bring to a boil on high heat for 5-7 minutes, then cover and lower to a simmer for 30 minutes.
  • After the rice is cooked, let it rest covered for 10 minutes before serving.
