  • 2 cups cooked pasta Use whole wheat or gluten-free pasta for a healthier option.
  • 1 cup cooked chicken, diced Leftover cooked chicken can be used.
  • 1 cup romaine lettuce, chopped Best when added just before serving.
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup Caesar dressing Add dressing just before serving for freshness.
  • Salt and pepper to taste

Optional Toppings

  • croutons For topping.

Preparation

  • In a large bowl, combine the cooked pasta, diced chicken, chopped romaine, and grated Parmesan.
  • Drizzle Caesar dressing over the top and toss until everything is well coated.
  • Season with salt and pepper to taste.
  • Serve chilled, and top with croutons if desired.

Notes

Leftovers should be stored in an airtight container in the refrigerator. It's best enjoyed within 2-3 days. For a vegetarian version, replace the chicken with chickpeas or tofu. Can make it ahead of time but wait to add the dressing until ready to serve.
