  • 1 cup cooked chicken, diced Use leftover chicken to save time.
  • 2 cups romaine lettuce, chopped You can switch to spinach or mixed greens for variation.
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup parmesan cheese, grated
  • 1/4 cup Caesar dressing For a lighter version, use low-fat dressing.
  • Salt and pepper to taste

Preparation

  • In a large bowl, combine the cooked pasta, diced chicken, and chopped romaine lettuce.
  • Add the cherry tomatoes and grated parmesan cheese.
  • Pour the Caesar dressing over the salad and toss gently to combine.
  • Season with salt and pepper to taste.
  • Serve immediately or chill in the refrigerator for a short time before serving.

Notes

This salad can be made ahead of time; just remember to add the dressing before serving to keep the lettuce crisp. It lasts 2-3 days in the refrigerator.
