Ingredients
  

For the Chicken

  • 1 1/2 lb Springer Mountain Farms chicken breast
  • 1 1/2 tsp paprika (OliveNation)
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder (OliveNation)
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt

For the Pasta and Sauce

  • 12 oz gluten-free farfalle pasta
  • 2 tbsp olive oil (Costabile Brand, use code 15GOLDENGK for 15% off)
  • 4 tbsp butter
  • 2 tsp dry shallots (use code 15GOLDENGK for 15% off)
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp gluten-free 1:1 flour
  • 3 cups heavy cream
  • 12 oz shredded parmesan cheese
  • 1/4 cup pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions
 

Preparation

  • In a large pot, boil the pasta according to the directions on the box for al dente.
  • Place all the chicken seasonings (paprika, oregano, garlic powder, thyme, salt, and pepper) into a small bowl and mix together.
  • Pound the chicken to thin it out slightly, then season it on both sides with the mixed seasoning.

Cooking

  • In a large skillet, heat the olive oil over medium heat.
  • Once hot, sear the chicken for about 5 minutes on each side.
  • After searing, lower the heat to medium-low, cover the pan, and cook for an additional 10-12 minutes, until the internal temperature reaches 165 degrees.
  • Remove the chicken from the pan and set it on a cutting board.
  • Add butter to the pan and let it melt.
  • Once melted, add the pasta seasonings (dry shallots, garlic powder, and Italian seasoning). Stir well and let simmer for one minute.
  • Next, add the gluten-free flour and stir well, scraping the bottom of the pan.
  • Pour in the chicken broth and heavy cream, whisking until smooth and creamy.
  • Add the parmesan cheese, stirring until it completely melts. Cook until the sauce reaches your desired consistency.
  • Add the cooked pasta to the sauce and toss to coat evenly.
  • If the sauce is too thick, gradually add the pasta water one tablespoon at a time.
  • Finally, slice the chicken breast and place it on top of the pasta. Carefully stir and serve hot!

Notes

Serve warm in bowls with extra parmesan cheese on top. Pair with a fresh green salad or steamed vegetables. Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat on the stovetop or in the microwave, adding cream or broth if needed.
