  • 3-4 pieces boneless, skinless chicken breasts Can substitute with turkey or shrimp.
  • Lo Mein noodles (fresh or dried) Can substitute with spaghetti or rice noodles.
  • 1 piece red bell pepper Chopped.
  • 1 piece yellow bell pepper Chopped.
  • 2 pieces carrots Thinly sliced.
  • 2 pieces green onions Chopped.
  • ¼ cup low-sodium soy sauce For flavoring.
  • 1 tablespoon sesame oil For cooking and flavor.
  • 3 cloves fresh minced garlic Adds flavor.

Instructions
 

Preparation

  • Gather all ingredients and make sure they are ready.
  • Chop the bell peppers, thinly slice the carrots, and chop the green onions.
  • Cook the Lo Mein noodles according to package instructions until al dente, then drain and set aside.

Cooking

  • Heat a large skillet or wok over medium-high heat and add 1 tablespoon of sesame oil.
  • Once the oil is hot, add chicken breasts and sauté for about 6-8 minutes until golden brown and fully cooked.
  • Remove chicken from the skillet and set aside.
  • In the same skillet, add the chopped bell peppers, sliced carrots, and green onions. Stir-fry for about 3-4 minutes until they are tender yet crisp.
  • Return the cooked chicken to the skillet with the vegetables, add the cooked Lo Mein noodles, pour in the soy sauce, and add minced garlic.
  • Toss everything together until well mixed and heated through.

Serving

  • Serve Chicken Lo Mein hot, garnished with additional green onions or sesame seeds if desired.

Notes

For best results, use a wok and start with a hot pan. You can customize the vegetable mix and try different sauces for variation.
