  • 1 cup cornstarch Helps to create a crispy coating.
  • 1 teaspoon kosher salt For seasoning the chicken.
  • 0.5 teaspoon black pepper For seasoning.

  • Paprika Add for color and taste.
  • Cayenne pepper For a spicy kick.
  • Flavored potato chips Like dill pickle or sour cream and onion for unique flavors.

Preparation

  • Select chicken breasts or thighs and cut into 1-2 inch bite-sized pieces.
  • Prepare the coating by crushing potato chips and mixing them with cornstarch, salt, and pepper.
  • Set up a station with the egg for dipping, followed by the coating mixture.

Cooking

  • Preheat your oven to 425°F (220°C) or prepare your air fryer.
  • Dip each piece of chicken into the egg, then coat thoroughly with the chip mixture.
  • Place the coated chicken pieces on a baking sheet or air fryer basket.
  • Bake for 10-15 minutes or until golden and the internal temperature reaches 165°F (74°C).

Serving

  • Serve hot with your choice of dipping sauces, such as honey mustard or BBQ sauce.

Notes

For gluten-free nuggets, use gluten-free potato chips and cornstarch. Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
