  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 pound chicken sausage, sliced Spicy or mild varieties work well.
  • 2 cups broccoli florets You can use other vegetables like asparagus or green beans.
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1/2 cup grated Parmesan cheese Optional for extra flavor.
  • 2 tablespoons fresh parsley, chopped

  • In a large pot, heat the olive oil over medium heat. Add the sliced chicken sausage and cook for 5–7 minutes until browned.
  • Add the minced garlic and cook for about 1 minute until it becomes fragrant.
  • Add the broccoli florets and cook for 2–3 minutes until they start to soften.
  • Stir in the orzo, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce to a simmer.
  • Cover and cook for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  • Remove from heat and stir in the Parmesan cheese until melted and well combined.
  • Garnish with parsley and serve hot. Optionally, stir in 1/4 cup of heavy cream just before serving for a creamier texture.

Notes

To store leftovers, let the dish cool completely, place it in an airtight container, and store it in the fridge for up to 3 days. You can reheat it in the microwave or on the stove with a splash of chicken broth to loosen it up.
