  • 1 lb chicken breast, diced
  • 2 pieces sweet potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can coconut milk
  • 2 cups vegetable or chicken broth
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation and Cooking

  • In a large pot, sauté the onion, garlic, and ginger until fragrant.
  • Add the chicken and cook until browned.
  • Stir in the curry powder and turmeric, cooking for another minute.
  • Add the sweet potatoes, coconut milk, and broth.
  • Bring to a simmer and cook until the sweet potatoes are tender and the chicken is cooked through, about 20-25 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro.

Notes

Serve over a bed of rice or with naan. For extra spice, add chili peppers or red pepper flakes. You can also add bell peppers or spinach for more nutrition. Cut sweet potatoes into uniform cubes for even cooking.
