For the Cake

  • 1 cup Salted Butter Softened
  • 3 cups Granulated Sugar
  • 1 teaspoon Instant Coffee Granules
  • 1/4 cup Warm Water
  • 1 1/4 cups Buttermilk
  • 2 teaspoons Vanilla Extract
  • 2 1/2 cups All-Purpose Flour
  • 1 cup Unsweetened Cocoa Powder High-quality is recommended
  • 3/4 teaspoon Salt
  • 1/2 teaspoon Baking Powder
  • 6 large Eggs Room temperature

For Dusting

  • 1 cup Powdered Sugar Optional, for dusting

Preparation

  • Preheat your oven to 325°F (165°C).
  • Grease and flour a 9x5-inch loaf pan.

Mixing the Batter

  • In a large bowl, cream together the softened butter and granulated sugar for 3-4 minutes until light and fluffy.
  • Add in the eggs one at a time, beating well after each addition.
  • Mix in the vanilla extract.
  • In another bowl, combine the flour, cocoa powder, baking powder, salt, and instant coffee granules.
  • Gradually add the dry mixture to the wet mixture, alternating with the buttermilk. Mix until just combined to avoid overmixing.

Baking the Cake

  • Pour the batter into the prepared loaf pan. Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely.

Notes

For a moist cake, ensure all ingredients are at room temperature and do not overmix the batter.
