  • 1 cup grated zucchini
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Optional Ingredients

  • 1/2 cup chocolate chips optional

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, mix together the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  • In another bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.

Mixing

  • Gradually add the dry ingredients to the wet ingredients and mix until just combined. If desired, fold in chocolate chips.

Baking

  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Slice and enjoy your chocolate zucchini bread for breakfast or as an afternoon snack!

Notes

Make sure to squeeze out excess moisture from the grated zucchini before adding it to the mixture. For a richer flavor, try using dark cocoa powder instead of the regular cocoa powder. Feel free to mix in nuts or dried fruit for added texture and flavor.
