Fresh Vegetables

  • 2.5 cups diced green tomatoes Use unripe tomatoes for authentic texture.
  • 2.5 cups finely chopped green cabbage Fresh and crisp cabbage is key.
  • 2 cups diced white onions
  • 2 cups bell peppers (mix of red and green) Adds color and flavor.
  • 4-6 cloves garlic, sliced

Spices and Seasonings

  • 1 cup white vinegar For pickling.
  • 2.5 cups granulated sugar Adjust sweetness to taste.
  • 2 tablespoons kosher salt Avoid iodized salt.
  • 3 tablespoons ground black pepper For added heat.
  • 1 tablespoon dry mustard
  • 2 teaspoons celery seeds
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon ground turmeric

Preparation

  • Gather and prepare all fresh vegetables. Dice green tomatoes, finely chop cabbage, and dice onions and bell peppers.
  • Soak the chopped vegetables in salt water overnight to enhance flavor and texture.

Cooking the Mixture

  • In a large pot, mix the prepared vegetables with white vinegar, granulated sugar, kosher salt, and ground black pepper.
  • Bring the mixture to a boil over medium heat while stirring occasionally.
  • Once boiling, reduce heat and let it simmer for an hour, allowing the flavors to meld.

Canning the Relish

  • Sterilize glass jars and lids in boiling water.
  • Fill the jars with the hot relish, leaving 1/4 inch headspace.
  • Process the filled jars in boiling water for 15 minutes.
  • Remove from water and let jars cool, checking for proper seals.

Notes

Store in a cool, dark place. The relish will last up to 18 months. Adjust spice levels according to your preference by adding hot peppers or more sugar.
