Ingredients
  

Pasta Ingredients

  • 16 oz bow tie pasta, cooked and cooled You can use your favorite type of pasta.
  • 1.5 cups corn kernels (about 2 ears of corn)
  • 1.5 cups cherry tomatoes, halved
  • 0.5 small red onion, chopped or thinly sliced
  • 2 Tbsp cilantro, finely chopped
  • 1-2 avocados, diced Optional for serving.
  • 0.5 cup plain Greek yogurt
  • 0.25 cup fresh lime juice
  • 0.25 cup cilantro, roughly chopped Leaves and stems are okay.
  • 2 garlic cloves
  • 0.5 tsp salt
  • 0.125 tsp cayenne
  • Cotija cheese, crumbled Optional for topping.

Instructions
 

Make the Dressing

  • In a food processor, combine the Greek yogurt, fresh lime juice, chopped cilantro, garlic, salt, and cayenne.
  • Blend until smooth. Adjust seasoning to taste. Cover and store in the refrigerator.

Toss the Pasta Salad

  • In a large mixing bowl, combine the cooked and cooled bow tie pasta, corn kernels, halved cherry tomatoes, chopped red onion, and finely chopped cilantro.
  • Pour your desired amount of dressing over the pasta mixture.
  • Toss gently until everything is well coated in the dressing.

Serve

  • When ready to serve, top each individual portion with diced avocado and crumbled Cotija cheese, if using.
  • Enjoy immediately or chill for later.

Notes

Toss salad with dressing just before serving to keep it fresh. Ensure the pasta is cooled before mixing to avoid wilting the fresh ingredients.
