  • 3 pieces ripe bananas Use very ripe bananas for the best flavor and sweetness.
  • 1/2 cup butter, melted Can substitute with vegetable oil.
  • 1 cup sugar
  • 1 piece egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour Don't overmix to avoid tough bread.
  • 1 tablespoon cinnamon Adjust for preferred flavor intensity.
  • 1/4 cup brown sugar

Instructions
 

Preparation and Mixing

  • Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  • In a mixing bowl, mash the ripe bananas with a fork until smooth.
  • Stir in the melted butter.
  • Mix in the sugar, beaten egg, and vanilla extract.
  • Sprinkle the baking soda and salt over the mixture and mix in.
  • Add the flour and mix until just combined.

Cinnamon Swirl Preparation

  • In a small bowl, combine the cinnamon and brown sugar for the swirl.
  • Pour half of the banana batter into the prepared loaf pan, sprinkle half of the cinnamon mixture, add the remaining banana batter, and top with the remaining cinnamon mixture.
  • Swirl the mixture with a knife.

Baking

  • Bake for 60-70 minutes or until a toothpick comes out clean.
  • Let it cool for 10 minutes in the pan, then transfer it to a wire rack to cool completely.

Notes

Best served warm or at room temperature. Pairs well with coffee or tea. Store in an airtight container for up to 3 days at room temperature, or refrigerate for up to a week or freeze for up to three months.
