  • 4 pieces skinless and boneless chicken thighs
  • 1 can coconut milk (14 oz)
  • 2 pieces limes (juice)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish Optional, for serving

  • Heat olive oil in a pan over medium heat.
  • Season chicken thighs with salt and pepper and sear in the pan until golden brown on both sides, about 5 minutes.
  • Remove chicken from the pan and set aside.
  • In the same pan, add garlic and ginger, and sauté for 1-2 minutes.
  • Return chicken to the pan, pour in the coconut milk and lime juice.
  • Bring to a simmer, cover, and cook for 15-20 minutes until chicken is tender.
  • Garnish with fresh cilantro and serve.

Notes

For extra flavor, marinate the chicken thighs in lime juice, garlic, and ginger for a few hours before cooking. Adjust the amount of lime juice according to your taste preference. Add red pepper flakes or sliced jalapeños when sautéing for heat.
