Instructions
 

Preparation

  • Mix the dry ingredients (flour, baking powder, salt) in a large bowl.
  • Add in the cottage cheese, milk, and eggs, mixing until a shaggy dough forms.

Kneading

  • Knead the dough by hand for 8-10 minutes until smooth and elastic, or use a stand mixer for 6-8 minutes.

Rising

  • Let the dough rise in a warm, draft-free area for 1-2 hours until doubled in size.

Shaping

  • Shape the dough into a boule, bâtard, or any preferred form.

Baking

  • Preheat the oven to 375°F to 425°F (190°C to 220°C).
  • Bake for 30-35 minutes until the bread is golden and sounds hollow when tapped.

Notes

Store the bread in a cool, dry spot. For longer storage, wrap and freeze. Try adding different herbs for variety!
