Main Ingredients

  • 1 cup cooked shell pasta (or your favorite shape) Pasta should be cooked according to package directions.
  • 1 link Applegate chicken sausage, sliced Any preferred chicken sausage can be used.
  • 1 small zucchini, sliced You can also use other vegetables.
  • 1 handful fresh spinach Can be substituted with other leafy greens.
  • ¼ cup light or reduced-fat cream cheese or Alfredo sauce Adjust based on preference for creaminess.
  • to taste Salt & pepper Season according to personal preference.
  • 1 tsp olive oil Or use olive oil spray.

Preparation

  • Prepare pasta according to package directions. Drain and set aside.

Cooking

  • In a skillet, heat olive oil and sauté zucchini until golden. Add spinach and cook until wilted.
  • Toss in the sliced chicken sausage and sauté until heated through and lightly browned.
  • Stir in pasta and cream cheese (or Alfredo sauce). Mix until everything is evenly coated and creamy.
  • Add salt, pepper, and any additional herbs you love. Serve warm and enjoy!

Notes

Serve warm with grated cheese or fresh herbs on top. Pairs well with a side salad. Store leftovers in an airtight container for up to 3 days in the fridge. Reheat in the microwave with a splash of water or milk to maintain creaminess.
