  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (e.g., broccoli, peas, corn)
  • 1 cup heavy cream
  • 1 cup shredded cheese (e.g., cheddar)

  • optional Fresh herbs for garnish e.g., parsley or cilantro

Cooking

  • Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Pour in the vegetable broth and add the mixed vegetables. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the vegetables are tender.
  • Stir in the heavy cream and cheese until melted and smooth.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh herbs if desired.
