  • 2 cups heavy cream 36-40% fat content for best results.
  • 5 pieces egg yolks Provides richness and thickening.
  • 1/2 cup sugar For sweetness and caramelization.

Instructions
 

Preparation

  • Preheat the oven to 300°F (149°C).
  • In a saucepan, heat the heavy cream over medium heat until it is just about to simmer.
  • In a bowl, whisk together the egg yolks and sugar until pale and thick.
  • Gradually add the hot cream to the egg mixture, whisking constantly to temper the eggs.
  • Stir in the vanilla extract.
  • Strain the custard through a fine-mesh sieve into a pitcher or bowl.

Baking

  • Place ramekins in a roasting pan and fill them with the custard mixture.
  • Pour hot water into the roasting pan to create a water bath, reaching halfway up the sides of the ramekins.
  • Bake for 25-30 minutes, until the edges are set but the center is still slightly jiggly.
  • Remove from the oven and the water bath, and let cool before refrigerating for at least 6 hours.

Finishing

  • Remove from the refrigerator and sprinkle a thin layer of sugar on top of each custard.
  • Using a kitchen torch, caramelize the sugar until golden brown and crisp.
  • Let the caramelized top cool for a minute before serving.

Notes

Use a high-quality heavy cream for the best texture. Strain the custard to eliminate any cooked egg bits for a smooth result.
