  • 2 cups grated zucchini (about 2 medium), excess moisture squeezed out Squeeze out as much moisture as possible.
  • 1 cup breadcrumbs (plain or seasoned)
  • ½ cup grated Parmesan cheese Can be substituted with cheddar for a different taste.
  • 2 large eggs
  • 2 cloves garlic, minced
  • ¼ cup finely chopped onion
  • 2 tablespoons chopped fresh parsley (or 1 teaspoon dried)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning (optional)
  • Cooking spray or olive oil (for baking) Use for greasing the baking sheet.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease with cooking spray or olive oil.
  • In a large bowl, combine grated zucchini, breadcrumbs, Parmesan, eggs, garlic, onion, parsley, salt, pepper, and Italian seasoning (if using). Mix well until fully combined.
  • Form the mixture into small balls, about 1 to 1½ inches in size. Place them evenly spaced on the prepared baking sheet.

Baking

  • Bake for 20–25 minutes, turning once halfway through, until golden brown and slightly crisp on the outside.
  • Let cool slightly before serving. Serve warm with marinara sauce, ranch, or your favorite dip.

Notes

These bites are best served warm. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for a few minutes until warmed through and crispy again.
