  • 1 can (13.5 oz) coconut milk
  • 1/4 cup lime juice Freshly squeezed for best flavor.
  • 2 cloves garlic, minced
  • 1 teaspoon lime zest
  • Salt and pepper to taste
  • Fresh cilantro for garnish Optional, for serving.

Preparation

  • In a crockpot, combine the coconut milk, lime juice, garlic, lime zest, salt, and pepper.
  • Add the chicken breasts, ensuring they’re fully submerged in the mixture.

Cooking

  • Cover and cook on low for 6-8 hours or high for 4-5 hours, until the chicken is tender and cooked through.
  • Once cooked, shred the chicken in the sauce and mix well.

Serving

  • Serve over jasmine rice and garnish with fresh cilantro.

Notes

For extra flavor, marinate the chicken in the coconut milk and lime juice for a few hours before cooking. You can add bell peppers or broccoli for added nutrients and color.
