  • 2 pieces boneless, skinless chicken breasts Use fresh or frozen (adjust cooking time if frozen)
  • 8 ounces pasta (penne or rotini) Can substitute with gluten-free pasta
  • 1 cup chicken broth
  • 1 cup heavy cream Add more if needed for reheating
  • 1/2 cup grated Parmesan cheese Plus extra for serving
  • 4 cloves garlic, minced Add roasted garlic for richer flavor
  • 1 teaspoon Italian seasoning Experiment with different seasonings to taste
  • Salt and pepper to taste

Preparation

  • Place the chicken breasts in the bottom of the crockpot.
  • In a bowl, combine chicken broth, heavy cream, minced garlic, Italian seasoning, salt, and pepper. Pour the mixture over the chicken.

Cooking

  • Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  • About 30 minutes before serving, cook the pasta according to package instructions.

Final Steps

  • Remove the chicken from the crockpot and shred it. Return the shredded chicken to the pot.
  • Stir in the cooked pasta and Parmesan cheese until well combined.
  • Serve hot, garnished with fresh parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat with additional cream or broth if needed.
