Basic Ingredients

  • 2 cups all-purpose flour
  • 1 cup bread flour
  • 1/2 teaspoon baking soda
  • 10 tablespoons unsalted butter Softened
  • 1 large egg
  • 1 large egg yolk
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 3/4 cups semisweet chocolate chips

Instructions
 

Preparing the Dough

  • In a bowl, mix all-purpose flour, bread flour, baking soda, and salt.
  • In a separate bowl, cream softened butter and both sugars until fluffy.
  • Beat in the egg, egg yolk, and vanilla until smooth.

Shaping Your Crookies

  • Slice croissants in half horizontally to create two even halves.
  • Press about 2 tablespoons of the prepared cookie dough into each croissant half.
  • Reassemble the croissant by placing the top half back and press gently.
  • Add an additional tablespoon of dough on top of the reassembled croissant.

Baking

  • Preheat your oven to 360°F (180°C) and line a baking sheet with parchment paper.
  • Bake the crookies for 12-15 minutes until golden and gooey.
  • Cool on the sheet for a few minutes before transferring to a wire rack.

Notes

For best results, use room temperature dough and high-quality butter. Watch the baking closely to avoid overbaking.
