  • 2 lbs boneless, skinless chicken thighs You can use frozen chicken thighs as well.
  • 1 cup teriyaki sauce Store-bought or homemade.
  • 2 tablespoons honey Adjust sweetness to taste.
  • 1 tablespoon minced garlic Fresh garlic preferred.
  • 1 tablespoon minced ginger Use fresh ginger for best flavor.
  • 1 medium bell pepper, sliced Any color you prefer.
  • 1 medium onion, sliced Yellow or white onion recommended.
  • as needed optional cooked rice or noodles for serving Pair with steamed vegetables for a complete meal.
  • as needed optional green onions for garnish Adds a fresh touch.

Instructions
 

Preparation

  • Place the chicken thighs in the bottom of the crockpot.
  • In a bowl, mix together the teriyaki sauce, honey, garlic, and ginger. Pour this mixture over the chicken.
  • Add the sliced bell pepper and onion on top.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and tender.

Serving

  • Serve the chicken over cooked rice or noodles and garnish with green onions if desired.

Notes

For a thicker sauce, remove the chicken from the crockpot when it’s cooked, and let the sauce simmer on high for 15-20 minutes. Feel free to add other vegetables like broccoli or carrots for extra nutrients and flavor. For spice lovers, consider adding sriracha or red pepper flakes to the sauce mixture. You can substitute chicken thighs with chicken breasts if preferred, but keep an eye on the cooking time as breasts may cook faster.
