  • 4 pieces boneless skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional)
  • ½ cup chopped sun-dried tomatoes (in oil, drained)
  • 2 tbsp butter
  • to taste salt and pepper
  • for garnish fresh basil or parsley

Preparation

  • Season chicken breasts with salt and pepper on both sides.
  • In a bowl, whisk together chicken broth, heavy cream, Parmesan, garlic, oregano, thyme, and red pepper flakes.
  • Place chicken in the crockpot and pour the sauce over the top.
  • Sprinkle sun-dried tomatoes over the chicken.
  • Cook on LOW for 4 hours or HIGH for 2 hours, until chicken is tender and cooked through.
  • Add butter during the last 30 minutes of cooking and stir to combine.
  • Garnish with fresh basil or parsley before serving.

Notes

For more flavor, marinate the chicken in the sauce for a few hours before cooking. You can add more vegetables, like spinach or bell peppers, for added nutrition. Don’t forget to check the chicken’s internal temperature to ensure it’s fully cooked. For dairy-free, substitute heavy cream with coconut milk and use nutritional yeast instead of Parmesan cheese.
