Main Ingredients

  • 8 pieces tortillas (corn or flour) Use your preferred type of tortillas
  • 2 cups refried beans (or mashed black beans)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 2 cups enchilada sauce (red or green)
  • 1/4 cup diced onions (optional) For added flavor
  • 1/4 cup chopped cilantro (optional) For garnish
  • 1 tablespoon oil (for greasing the dish)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a baking dish with oil to prevent sticking.
  • In a bowl, mix the refried beans, half of the shredded cheese, and diced onions if using.

Assembly

  • Take a tortilla and spoon some of the filling onto the center. Roll it up and place it seam-side down in the baking dish. Repeat for all tortillas.

Add Sauce and Cheese

  • Pour the enchilada sauce evenly over the rolled enchiladas. Sprinkle the remaining cheese on top.

Baking

  • Place the baking dish in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

Serving

  • Once done, remove from the oven and let it cool slightly before serving. You can sprinkle chopped cilantro on top for added flavor.

Notes

These enchiladas can be served warm with extra enchilada sauce on the side. You can add toppings like sour cream, guacamole, or avocado slices.
