Ingredients

  • 1/2 cup quinoa Rinse quinoa before cooking to avoid a bitter taste.
  • 1 cup water For cooking quinoa.

Vegetables

  • 1 cup cherry tomatoes Cut in half.
  • 1 medium zucchini Chopped.
  • 1 cup bell peppers Sliced.
  • 1 medium cucumber Diced.

Proteins

  • 1 cup roasted chickpeas Seasoned with spices.

Toppings

  • 1/2 cup crumbled feta cheese For extra flavor.
  • 1 tablespoon olive oil For drizzling.
  • 2 tablespoons fresh herbs (parsley, mint) Chopped.

Dressing

  • 3 tablespoons extra virgin olive oil For the dressing.
  • 2 tablespoons fresh lemon juice Adds freshness.
  • 1 clove garlic Minced.
  • 1 teaspoon dried oregano For flavor.

Instructions
 

Prepare Quinoa

  • Rinse quinoa under cold water.
  • In a saucepan, combine rinsed quinoa and water, and bring to a boil.
  • Reduce heat and let it simmer for 15 minutes or until water is absorbed.
  • Fluff with a fork and set aside.

Roast Chickpeas

  • Preheat oven to 400°F (200°C).
  • Rinse and dry chickpeas, then season with spices.
  • Spread on a baking sheet and roast for about 20 minutes.

Prepare Vegetables

  • Wash and chop all vegetables as instructed above.

Make Dressing

  • In a bowl, whisk together olive oil, lemon juice, minced garlic, and oregano.

Assemble Bowl

  • In a bowl, layer quinoa, roasted chickpeas, and fresh vegetables.
  • Top with feta cheese and herbs.
  • Drizzle with dressing before serving.
