  • 1 pound ground turkey (93% lean)
  • 1 teaspoon onion powder

  • 4 cloves garlic (minced)
  • ½ Tablespoon fresh grated ginger
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon sriracha (optional) Adjust for spice preferences
  • cup low-sodium soy sauce Can substitute with coconut aminos for gluten-free
  • 2 teaspoons toasted sesame oil Do not omit for flavor
  • 1 cup frozen riced cauliflower
  • 12 ounces bagged coleslaw mix
  • 1 cup grated carrots Or bagged matchstick carrots
  • 1 cup frozen edamame
  • to garnish sliced green onions
  • to garnish sesame seeds

Instructions
 

Preparation

  • Gather all your ingredients and measure everything out for easy cooking.

Cooking

  • In a large skillet over medium-high heat, heat the olive oil.
  • Once the oil is hot, add the turkey. Use a wooden spoon or spatula to break it up as it cooks. Season with onion powder, salt, and pepper, and cook until browned and cooked through, about 7 minutes.
  • Add the minced garlic and grated ginger, cooking for an additional minute or until fragrant.
  • In a measuring cup, mix together the rice vinegar, sriracha, soy sauce, and sesame oil.
  • Add the coleslaw mix, grated carrots, edamame, and riced cauliflower to the skillet. Pour the soy sauce mixture over all the ingredients.
  • Stir everything together and cook for about 5 minutes or until all veggies are tender.

Serving

  • Portion the mixture into four bowls. Top them with sliced green onions and sesame seeds.

Storage

  • Allow leftovers to cool and store in an airtight container in the fridge for up to 4 days.
  • To reheat, place the mixture in a skillet with a lid over medium heat or microwave for 60-90 seconds.

Notes

Do not overcook the turkey; it should stay moist. Ensure your skillet is hot enough for a better sear. You can make this ahead of time and reheat for a quick meal.
