  • 6 oz salmon fillet Fresh, cut into bite-sized pieces
  • 1 Tbsp olive oil For cooking
  • 8 oz refrigerated tortellini Cook according to package instructions
  • 1/3 cup cream cheese
  • 1 small tomato, chopped
  • 1/2 unit zucchini, chopped
  • 1/2 tsp dill, dried
  • 2 Tbsp fresh chopped basil For garnish
  • 2 cloves garlic, minced
  • 3 Tbsp mozzarella For topping

Preparation

  • Cut the salmon into bite-sized pieces.

Cooking

  • In a large pan, heat 1 Tbsp of olive oil over medium heat. Add the salmon, dill, and chopped tomato.
  • Add a tablespoon of water and a pinch of salt. Cover the pan with a lid and let it cook for 3-4 minutes until the salmon is cooked through.
  • Stir in the cream cheese and a bit of black pepper. If the sauce is too thick, add another tablespoon of water to reach your desired consistency.
  • Add the refrigerated tortellini to the pan and cook in the sauce for 3-4 minutes or according to the package instructions.
  • Finally, mix in the minced garlic, chopped basil, zucchini, and sprinkle the mozzarella cheese on top.

Serving

  • Serve immediately, garnished with extra basil or Parmesan cheese if desired.

Notes

Ensure the salmon is fresh for the best flavor. You can swap out vegetables and use low-fat cream cheese for a lighter option. Frozen tortellini can be used with adjusted cooking times. For variations, consider using chicken or shrimp instead of salmon.
