Ingredients
  

For the potatoes

  • 4-5 pieces small/medium-sized potatoes, cubed Wash and peel before cubing.
  • 1 tablespoon Olive oil Used for tossing the potatoes.
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika For seasoning potatoes.

For the chicken

  • 2 pieces chicken breasts, cubed
  • ½ teaspoon Salt For seasoning chicken.
  • ½ teaspoon Pepper For seasoning chicken.
  • 1 teaspoon Paprika
  • 1 teaspoon Onion powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons Butter For cooking chicken.
  • 2 tablespoons Minced garlic
  • as desired Buffalo Wild Wings Garlic Parmesan Sauce

For topping

  • 1 cup Shredded mozzarella cheese

Instructions
 

Preparation

  • Wash and peel the potatoes, then cut them into small cubes.
  • Toss the cubed potatoes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.

Cooking Potatoes

  • Preheat the air fryer to 400°F.
  • Cook the potatoes for about 20 minutes, shaking the basket a couple of times to ensure even cooking.

Cooking Chicken

  • While the potatoes are cooking, cut the chicken breasts into small cubes.
  • In a bowl, season the chicken with ½ teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian seasoning.
  • Heat 2 tablespoons of butter in a skillet over medium-high heat.
  • Add the seasoned chicken cubes and cook until they reach an internal temperature of 165°F and are fully cooked through.

Finishing Touches

  • Stir in the minced garlic and Buffalo Wild Wings Garlic Parmesan Sauce to the skillet.
  • Cook for an additional 1-2 minutes, stirring to coat the chicken evenly in the sauce.
  • Once the air-fried potatoes are done, add them to the skillet with the chicken.
  • Toss everything together so the potatoes are coated with the sauce.
  • Sprinkle the shredded mozzarella cheese on top of the skillet.
  • Cover the skillet with a lid until the cheese melts or transfer the skillet under the broiler for a few minutes until the cheese is bubbly and golden.

Notes

Cut the chicken and potatoes into similar-sized cubes for even cooking. Adjust seasoning levels to taste. Feel free to add other vegetables like bell peppers or broccoli.
