Ingredients
  

Wet Ingredients

  • 1 cup milk (2%, whole, or nonfat)
  • 1 tbsp white or apple cider vinegar
  • 1 large egg
  • 3 tbsp unsalted butter, melted

Dry Ingredients

  • 2 cups plain white flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp table salt

Main Ingredients

  • 1 1/2 cups shredded zucchini Squeeze out excess moisture before adding.
  • 1 1/2 cups sharp cheddar cheese, grated
  • 2 pieces chopped green onions

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the flour, baking powder, baking soda, and salt.
  • In another bowl, combine the milk, vinegar, egg, and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Gently fold in the shredded zucchini, cheddar cheese, and chopped green onions.
  • Pour the batter into a greased or lined loaf pan.

Baking

  • Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Serve warm or at room temperature, either plain or with butter. Pairs well with soups and salads. Wrap tightly in plastic wrap or aluminum foil for storage. Keeps in the pantry for up to 3 days or can be frozen for up to 3 months.
