Ingredients
  

Vegetables

  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup mushrooms, sliced

Seasoning

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Wraps

  • 4 large tortillas
  • Hummus or your favorite spread (optional)
  • Fresh greens (like spinach or arugula, optional)

Instructions
 

Preparation

  • Preheat a grill or grill pan over medium heat.
  • In a bowl, toss the sliced zucchini, bell pepper, onion, and mushrooms with olive oil, garlic powder, salt, and pepper.

Cooking

  • Grill the vegetables for about 5-7 minutes, or until they are tender and slightly charred.

Assembly

  • Spread hummus or your favorite spread on each tortilla, if desired.
  • Divide the grilled vegetables among the tortillas and top with fresh greens.
  • Roll up the tortillas tightly and serve warm or at room temperature.

Notes

If you have leftovers, store the wraps in an airtight container in the refrigerator for up to two days. Keep the wraps separate from any spreads or greens that you add, so they don’t get soggy.
