  • 2 medium sweet potatoes, peeled and diced Provides natural sweetness
  • 1 cup zucchini, diced Adds volume and nutrition
  • 1 cup shredded cheese (cheddar or mozzarella) For topping

Seasonings & Oil

  • 2 tablespoons olive oil For cooking
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper For seasoning
  • optional chopped herbs for garnish Like parsley or cilantro

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large skillet, heat olive oil over medium heat.
  • Add the ground turkey and cook until browned.
  • Stir in the diced sweet potatoes and zucchini, cooking until they are tender.
  • Season with garlic powder, onion powder, salt, and pepper.
  • Transfer the mixture to a baking dish and sprinkle shredded cheese on top.
  • Bake for 20-25 minutes or until the cheese is melted and bubbly.
  • Remove from the oven, garnish with herbs if desired, and serve warm.

Notes

Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months. Cut sweet potatoes and zucchini evenly for even cooking. Add other vegetables like bell peppers or spinach for extra flavor.
