  • 1 lb ground turkey Lean ground turkey
  • 2 large sweet potatoes, peeled and diced Can substitute with butternut squash or regular potatoes
  • 1 tbsp olive oil For cooking
  • 1 medium onion, diced Add sweetness and flavor
  • 2 cloves garlic, minced For flavor
  • 1 medium red bell pepper, diced For color and nutrition
  • 1 tsp smoked paprika For depth of flavor
  • 1/2 tsp ground cumin For warmth
  • 1/2 tsp dried thyme For herbaceous note
  • to taste Salt and pepper For seasoning
  • 1 cup shredded mozzarella or cheddar cheese Can substitute with gouda or pepper jack
  • Fresh parsley or cilantro, chopped, for garnish Optional garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes.
  • Add the ground turkey to the skillet, breaking it up with a spoon. Cook until browned, about 5-6 minutes. Drain any excess fat if necessary.
  • Stir in the minced garlic, diced bell pepper, sweet potatoes, smoked paprika, cumin, thyme, salt, and pepper. Cook for an additional 3-5 minutes until the spices are fragrant and the veggies are lightly softened.
  • Transfer the turkey and vegetable mixture to the prepared baking dish. Cover with foil and bake for 25 minutes, or until the sweet potatoes are tender.
  • Remove the foil, sprinkle the shredded cheese evenly over the top, and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

Serving

  • Garnish with fresh parsley or cilantro if desired. Serve hot and enjoy!

Notes

This dish can be made ahead of time and stored in the fridge or freezer. It's perfect for meal prep or potlucks.
