  • 2/3 cup shredded Parmesan cheese Can use cheddar or mozzarella for a different flavor.
  • 1 1/2 tsp garlic powder Use fresh garlic for a stronger flavor if preferred.
  • 1 tsp rosemary Fresh rosemary can enhance the flavor.
  • 5 tbsp olive oil Essential for roasting vegetables.
  • Salt and pepper to taste Season generously for flavor.

Preparation

  • Preheat the Oven: Set your oven to 400 degrees Fahrenheit.
  • Prepare the Sweet Potatoes: Peel and chop the sweet potatoes into bite-sized cubes and place them in a large baking dish.
  • Season the Sweet Potatoes: Toss sweet potato cubes with 2 tablespoons of olive oil, 1/2 teaspoon of garlic powder, 1/2 teaspoon of rosemary, salt, and pepper.

Cooking

  • Roast the Sweet Potatoes: Bake for 30 minutes until tender and caramelized.
  • Brown the Ground Turkey: Heat 1 tablespoon of olive oil in a pan over medium heat. Add ground turkey, season with 1 teaspoon of garlic powder, 1/2 teaspoon of rosemary, salt, and pepper. Sauté until browned.
  • Prepare the Zucchini: Chop the zucchini into slices and quarter them.
  • Combine the Mixtures: Add the cooked turkey and chopped zucchini to the baking dish with sweet potatoes and mix thoroughly.
  • Bake Again: Return to the oven and bake for an additional 10 minutes.
  • Add Final Ingredients: Remove from the oven, drizzle with 2 tablespoons of olive oil, mix, and top with Parmesan cheese.
  • Final Bake: Bake for another 10 minutes until cheese is melted and bubbly.
  • Enjoy: Let cool for a few minutes before serving warm.

Notes
