Ingredients
  

Main Ingredients

  • 3 pieces spotty bananas Make sure they are very ripe.
  • 2 pieces eggs
  • 2 cups oat flour See above for instructions on making oat flour.
  • 1/2 cup coconut sugar Can be reduced for less sweetness.
  • 1/4 cup oil (such as avocado oil)
  • 1/4 tsp sea salt
  • 1 tsp baking soda
  • few shakes cinnamon For added flavor.
  • chocolate chips For mixing into batter and for topping.

Instructions
 

Preparation

  • Preheat oven to 350°F and line a loaf pan with parchment paper.
  • In a large bowl, mash the bananas with a fork.
  • Add all the ingredients except the chocolate chips and mix well.
  • Stir in the chocolate chips and pour the mixture into the loaf pan. Top with extra chocolate chips.

Baking

  • Bake for 50-55 minutes.
  • Let cool, slice, and enjoy.

Notes

This banana bread is great on its own, but can also be served with almond butter or yogurt. Store in an airtight container for up to 3 days or freeze for longer storage.
