Healthy Banana Bread

Ingredients
  

Wet Ingredients

  • 3 pieces ripe bananas (= 1 ½ cups mashed banana) Use overripe bananas for best sweetness and flavor.
  • cup coconut sugar Can be substituted with brown sugar or agave nectar.
  • ¼ cup maple syrup
  • ¼ cup non-dairy milk Almond, soy, or oat milk can be used.
  • 2 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 3 tbsp coconut oil (melted) Can be substituted with applesauce.

Dry Ingredients

  • 2 cups oat flour Can substitute with almond flour or gluten-free all-purpose flour.
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt

Add-Ins

  • cup vegan chocolate chips (plus more for topping)
  • ¼ cup walnuts (chopped) Can use pecans or almonds.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.
  • In a large bowl, whisk together the mashed bananas, coconut sugar, maple syrup, non-dairy milk, melted coconut oil, vanilla extract, and apple cider vinegar until fully combined.
  • In a separate bowl, combine the oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir to ensure even distribution.
  • Gradually mix the dry ingredients into the wet ingredients until just combined to avoid overmixing.
  • Fold in the vegan chocolate chips (saving some for the top) and chopped walnuts.
  • Pour the batter into the prepared loaf pan and smooth the top. Sprinkle additional chocolate chips and walnuts on top.

Baking

  • Place the pan in the preheated oven and bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, let the bread sit in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
  • Once cooled, slice and serve. Enjoy it on its own or with your favorite vegan butter.

Notes

To store, wrap tightly and it can last for 2-3 days at room temperature or up to a week in the refrigerator. For longer storage, freeze slices wrapped in plastic wrap for up to three months.
