Main Ingredients

  • 1 cup rolled oats or quick oats
  • 1 cup grated carrots use a fine grater
  • 1/2 cup almond flour can substitute with regular flour or coconut flour
  • 1/4 cup honey or maple syrup agave syrup or brown rice syrup are alternatives
  • 1/4 cup unsweetened applesauce can replace with unsweetened fruit puree like pumpkin or banana
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the rolled oats, grated carrots, almond flour, honey (or maple syrup), unsweetened applesauce, and vanilla extract until well combined.
  • In a separate bowl, combine the baking powder, cinnamon, nutmeg, and salt.
  • Add the dry ingredients to the wet ingredients and mix until well combined.
  • Use a spoon or cookie scoop to drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.

Baking

  • Place the baking sheet in the oven and bake for 12-15 minutes, or until the cookies are golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

Chill the dough for thicker cookies. Don’t skip the spices for added flavor and nutritional benefits.
