Preparation

  • Season the diced chicken breast with salt, pepper, Italian seasoning, and garlic powder in a bowl.

Cooking

  • Heat a large skillet over medium-high heat and add olive oil.
  • Cook the seasoned chicken pieces in the skillet for about 5-6 minutes on one side until browned, then flip and cook another 4-5 minutes until cooked through.
  • Add zucchini and yellow squash to the skillet, stirring gently to combine. Season with the remaining Italian seasoning, garlic powder, salt, and pepper.
  • Cook for an additional 3-4 minutes until the vegetables are tender yet crisp.
  • Stir in lemon juice and zest, and garnish with fresh parsley before serving.

Notes

Make sure not to overcook the vegetables; they should be tender but still have a bit of crunch. You can add other veggies like bell peppers or cherry tomatoes for variation. For extra flavor, consider marinating the chicken for about 30 minutes before cooking.
